Tofu Scramble That Actually Tastes Good

Most tofu scrambles taste of nothing, because they treat tofu like egg and expect it to bring its own flavor. It won’t. Tofu is a blank canvas, and a good scramble comes from what you add to it.

This version takes 15 minutes, uses one pan, and gives you about 34 g of protein per serving. That’s more than a three-egg scramble, with no cholesterol and no animal products.

Which tofu to buy

You don’t need to press tofu for a scramble. Just drain it, pat it dry with a clean towel, and crumble it by hand. Crumbling by hand, rather than with a fork, gives uneven curds that look and feel more like real scrambled eggs.

The three things that make it taste good

  1. Turmeric for color. A small amount turns the tofu golden. It adds color more than flavor, so don’t overdo it or it turns bitter.

Method

  1. Prepare the tofu. Drain the tofu, pat it dry with a clean kitchen towel, and crumble it by hand into a bowl. Aim for a mix of small and bite-sized pieces.
  2. Soften the onion. Heat the oil in a large non-stick pan over medium heat. Add the onion and cook for 3 to 4 minutes until soft. Add the garlic and cook for 30 seconds.
  3. Toast the spices. Add the turmeric, cumin and smoked paprika and stir for 20 seconds, until fragrant.
  4. Add the tofu. Add the crumbled tofu and stir to coat it evenly in the spices. Cook for 5 to 6 minutes, stirring occasionally, so some edges turn lightly golden.
  5. Make it creamy. Pour in the soy milk and stir. The tofu will look softer and more like scrambled eggs.
  6. Finish. Add the spinach and stir until just wilted, about 1 minute. Turn off the heat, then stir in the nutritional yeast, black salt and pepper. Taste and adjust the salt.
  7. Serve straight away, topped with chives.

Add the black salt at the very end. Its egg-like aroma fades with long cooking.

The tofu version is higher in protein and fiber, but also higher in calories, mostly because the serving is bigger. A 200 g portion of tofu is a filling meal, not a side.

As for taste, it won’t fool a committed egg lover, but with black salt and nutritional yeast it comes surprisingly close, and many people end up preferring the texture.

Storage and meal prep

Tofu scramble keeps in a sealed container in the fridge for up to 3 days. Reheat in a pan with a splash of soy milk or water to bring back the creamy texture, or microwave for 1 to 2 minutes, stirring halfway.
